Peanut butter and golden mushrooms

Tried frying golden mushrooms/enoki with peanut butter this morning. Unfortunately it did not turn out as I had hoped. Was hoping for a strong peanut taste, but it seems the peanut butter I used was rather on the sweet side and not very strong. In fact, it was labelled as 'peanut cream'. So I ended up with a dish much sweeter than I had hoped for.

Also, maybe I should have added the peanut butter after the mushrooms rather than before. But then again, enoki cooks and gets soft rather fast. Hm, shall try this again some time.

Rice, fried

Had some rice in the refrigerator, and some chicken meat and mushrooms to do something with. Had already sliced the mushrooms and diced the chicken meat when I decided to fry the rice with everything else. Not exactly the normal ingredients I use for my fried rice, but thought I would just see how it went. Cut up some dried chilli, and got ready some szechuan pepper and chilli powder. Heated the wok, added oil, and fried the spices in it. A spicy hot aroma soon effused. Threw in the chicken, stirfried it and then added the mushroom. Then the rice. Just could not get it to dry out and fry properly. Japanese rice is of course more sticky than Thai rice, but I have done it with Japanese rice before. The mushrooms probably gave off some moisture. And admittedly I did not take as much care frying last night.

Anyway, since I could not get it to the dry texture I wanted, and the smell of the burnt layer stuck to the wok reminded me of claypot rice, decided to just fry it a bit more and go for a claypot rice feel. Taste : good, since I really wanted to eat something spicy that day. Of course, a failure as fried rice.
